SPOKANE, Wash. — When organizers announced the end of Pig Out in the Park, local food vendors and small business owners lost a platform to reach thousands of potential customers.
One community member decided that void needed to be filled.
Todd Beck, owner of Beck’s Harvest House, stepped in to create Stuffed on the Bluff, a new food truck and vendor event that debuted over Labor Day weekend. Thousands of people showed up, with lines of cars flooding into the event.
“It’s really fun,” said Bo Kukhahn, a Spokane resident who attended the event. “You’ve got live music, you got good eats, you’ve got all these little vendors that are local just trying to make a good living like the food trucks and stuff, and when you get a crowd it really helps them out.”
The inaugural event featured a diverse lineup of local vendors and food trucks from the area, including Sweet Mamas and Tacos Camargo. Beyond the food, attendees enjoyed live music performances and a drink tent for adults, creating a full community experience similar to what Pig Out in the Park had offered for decades.
Beck said the outpouring of gratitude from attendees reinforced his decision to organize the event. “Everyone here seems so happy and I’m amazed at how many people stopped and just said thank you for putting this on,” Beck said. “I know it’s a lot of work but this is so great that they put this on for all of us thank you, and that just makes it all worthwhile.”
The success of the inaugural event has already shaped Beck’s vision for the future. He plans to make Stuffed on the Bluff an annual tradition and hopes to see an even bigger crowd return next Labor Day weekend.
