SPOKANE, Wash. — Spokanites formed a long line at Birdie’s Pie Shop Tuesday morning in hopes of snagging a last-minute Thanksgiving pie. Some people even lined up an hour before the shop opened.
Nearly 4,500 Birdie’s pies will be served on Thanksgiving tables this year, leading to a type of controlled chaos for store staff.
“Basically from open to close, it’s nonstop. There’s never any downtime,” said Birdie’s lead baker William Torres.
While some shoppers left with their first choice of pie, others left with whatever was left. One thing they all had in common though, was the smile on their faces.
“I love a good classic apple pie,” customer Courtney Jiles said. “So excited about that. But I also really love coconut cream pie so I’m excited about that one.”
Jiles returned to her family with a few different pies to put on the Thanksgiving table.
“I got four personal pies,” she said. “I got apple pie, a chocolate pecan pie, coconut cream pie and an apple cider pie.”
To make sure everybody gets to enjoy a delicious Birdie’s pie this Thanksgiving, hundreds of pies are stored and sold in the shop over the next few days. Over 60 large pies or 300-400 individual pies can also be baked at a time.
Staff said it’s all about teamwork, good planning and hard work.
“This is days and weeks of planning, but also prepping. All to come out in two days,” Torres said.
The last two days have sometimes felt like pure madness, said the staff. But in the end, those days are filled like a pie: with joy and holiday cheer.
“Share it with family. Share with friends. Keep the community going,” Torres said.
